Alfajores de Maizena


  • 1 ½  cups / 200 grams of wheat flour

  • 2 ½  cups / 300 grams of cornstarch Maizena

  • 2 teaspoons of baking powder

  • 1 ⅛ cup / 200 grams of unsalted butter

  • ¾ cup / 150 grams of granulated sugar

  • 3 egg yolks

  • 1 teaspoon of vanilla extract

  • 1 teaspoon of lemon zest

  • Dulce de leche, for filling

  • Shredded coconut




  1. Sift together the cornstarch (Maizena), flour, and baking powder.

  2. In a bowl, beat the butter and sugar. Incorporate the egg yolks one by one, mixing very well until they are completely combined.

  3. Incorporate the dry ingredients to that mixture and add the vanilla extract and lemon zest. Mix well until you get a homogeneous and even dough.

  4. Roll out the dough on a lightly floured surface, without kneading it, to 1/2 cm thickness. Cut out rounds, using a plain cutter.

  5. Place the rounds on clean baking sheets, leaving enough room between them. Bake them in médium temperatura for 15 minutes (or until they are slightly golden in the bottom). Once the halves are done, let them cool down.

  6. Assemble the alfajores spreading some dulce de leche on one of the flat sides of a cookie and placing a second cookie on top of it. Slightly press them. Once they are ready, dust the border with some shredded coconut and … Enjoy!!!



Once the halves have completely cooled down, they can be stored in vacuum sealed containers to avoid moisture, so that they are ready to be used anytime

You can also keep them in plastic bags in the freezer. When needed, you take the cookies to prepare an alfajor, allow them to reach room temperature, and DONE!!!
